A cylindrical pile of pressing mats and paste stacked on top of each other onto which the hydraulic press is operated in the pressing process.

Example

The hydraulic press system was used traditionally. It consists, in essence, in placing the paste, once mixed, in placing the filtres, made of esparto or synthetic fiber (or a mixture of both) known as pulp mat or olive mat making up the pressing unit or load.
