The mixture resulting from the milling of olives and consisting of a solid part, called pomace (peel, pulp and crushed pits), and a liquid part (oil and water).

Example

During the milling process the olive paste may be exposed to air. The old fashioned stone wheel and hydraulic press with jute mats or Rapanelli discs may be very picturesque but exposes the paste to way too much air. More modern malaxation tanks make sure the paste is always enclosed with minimal contact with air.
