The six olive oils were obtained six different Spanish traditional factories. Olive oils 1, 2, 3, 4 and 6 were obtained olive trees cultivated in the traditional agricultural system, while olive oil 5 was ecological. Olive oil, 2, 4, 5 and 6 were obtained by the centrifugation two-phase system that preserves the quality of olive oils at high levels with respect to polyphenols and pigments contents (Boskou, 1998) and olive oil 3 by the vestigial old first-pressing system.

the continuous three-phase system was developed in the early 1970s and is now used in approximately 5% of Spanish mills. In Andalusia, this system was replaced in the 1990s by the two-phase system, which is now used by 92% of the oil industry in Spain. This system does not use addition water and therefore does not generate mill wastewater, a major water pollutant. For this reason, it was initially commercialised as an "ecological system".
