he harvesting method that involves sliding the hands gently along the olive-tree branches so that the olives are dislodged from them and made to fall into a harvesting basket or onto the harvest nets, thus avoiding damaging knocks against the ground, as happens with fallen olives.

Example

We started picking from the trees close to the highway. We were instructed to run our hands down the olive-laden branches, milking olives from the tree.

Additional information

This is the most desirable harvesting method, but it is costly and, therefore, rare. The process of table olive milking is conducted with even greater care, so that the fruit remains completely undamaged.
