oleic acid is present in olive oil at variable percentages, mainly according to the variety of olive used. It is a highly valued fat not only for its culinary properties, but also because it resists better the high temperatures reached in frying, it is more stable, breaks down more slowly and soaks food in fat to a lesser extent, so food fried in olive oil is less caloric because it contains less fat.
