the process whereby large-sized foreign matter, such as stalks, soil, dust, fungi and other elements, are washed off the olives by means of water-jet systems in order to prevent mill machinery deterioration, keep the olive oil free from extraneous smells and tastes, and prevent an undesired speed of fermentation, all of which would negatively affect the end-product quality.

Example

When the olives have been transported to the mill, the first step before the extraction of the olive oil is washing.
